Fall Favourite - Zucchini Bread

Hi!

I hope you all had a good labour day weekend :)

When I woke up this morning, the weather really seemed to have changed from summer to fall - so I decided to make one of my fall favourites - zucchini bread. 

Thought I'd share the recipe, since it's a great one!


Pre-heat oven to 325 degrees fahrenheit
Grate 2 cups of Zucchini (packed & seeded)
Chop up 1/2 cups of Nuts


In separate bowls, mix dry & wet ingredients. 

Bowl 1
3 cups of Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1.5 tsp Cinnamon
1 tsp Salt
1.5 cups of Sugar


Bowl 2
1 cup of Vegetable Oil
3 Eggs
2 tsp Vanilla
1/2 tsp Almond Extract


Mix ingredients separately then combine them in the same bowl


Add in zucchini and chopped nuts, stir. 


Butter & flour cake pans, divide batter. 

Cook for 1 hour


Voila!
